During processing, factors such as equipment agitation and fluctuations in ambient temperature can easily give rise to foaming. The reason for bubbling when frying food:
1. Affected by temperature conditions, oils with high phospholipid content—such as soybean oil, crude oil, and second-grade oil—tend to foam readily under high-temperature frying conditions.
2. Oil contains phospholipids, which readily absorb water and, being surfactants themselves, easily generate foam.
3. During the frying process, equipment operation and agitation entrain large amounts of air, resulting in foam formation.
4. The oil used for frying contains a high level of impurities, which form foam under high-temperature conditions.
What harms could occur if the foam from fried foods is not removed promptly?
1. The foam generated during frying can create voids within the food, thereby affecting its texture and mouthfeel.
