In particular, during the production of soybean products or the microbial fermentation of beverages and soy sauce, vigorous mixing of raw materials often leads to rapid foam formation and substantial foam volume. Consequently, defoamers are widely used in the food industry.
After adding a food antifoaming agent, the rate of liquid drainage from the foam film can indicate foam stability; the antifoaming agent promotes liquid drainage from the liquid film, thereby leading to bubble rupture.
