Consequently, foam formation during food processing has become a critical issue that warrants close attention, prompting the use of defoaming agents.
When producing large quantities of starch‑rich foods, or when processing bean products such as cellophane noodles, tofu, and soft tofu, the raw materials, subjected to mechanical agitation, readily generate abundant bubbles. Because these bubbles consist of powdered ingredients, they are not easily removed. Food‑grade antifoaming agents, available from food additive suppliers, possess low surface tension and high surface activity, enabling them to suppress or eliminate foam in liquid systems.
